We utilize iPads at our games. We have created whiteboard scoresheets that our officials will use to track attendance and scores. At the conclusion of the games, we have the supervisors take a picture of the whiteboard and input the scores on IMLeagues.
So we have staff that inputs the scores. We have only allowed players to report the scores in our racquet sports.

In our program here at Valparaiso University, I print out the scoresheets each day and give them to the sport supervisors. The sport supervisors will then input the scores/attendance at the end of the night.

We print out customized scoresheets, then have scorer/timers or officials record scores and a programmer (GA) inputs scores the next day. This works best for us due to requiring a "wet" signature from every participant and recording participation for the evening. As of right now, we do not have people add to IM Leagues prior to participation - but that is a different story..

Here at Oregon, we print the scoresheets daily and put them into our sport clipboards for the evening. The officials/supervisors record the scores and we have office staff that will input the results and attendance first thing the following morning.
Ideally we would like to transition to tablets, but on any given night we could have up to 10 surfaces/courts/fields that we are playing on, so that would require us to have at least 10-12 tablets. The main issue, actually, is our wi-fi connection. Sometimes we play in satellite facilities or on fields that are not centrally located so the internet connection is very weak or non-existent.
For the time being, our method of printing the scoresheets is very fluid and an easy process!

Essentially we do the same thing Oregon does. We print the score sheets daily and have our officials/scorekeepers/sups record the score on the sheets. A GA or OA will enter them the next morning.
When we are in playoffs, we will schedule an office assistant to sit in our office and input scores as soon as games are done so teams can determine when their next game is so they can put in reschedule requests immediately after their game.
Here at CMU we do what everyone else is doing; printing scoresheets, putting them on binders, and having office staff enter scores and participation the next morning. Works well, and gives the students a chance to do some of the work that is behind the scenes!
Ideally, like others have said, I would like to do tablets, but as of right now, it's good ol' paper and pencils!
At Montana State we use both paper score sheets and iPads. I print out the nightly score sheets for the staff to write on and we use tablets to check in participants or add them to a team. Our wifi isn't very good so I got iPads that are connected to our department phone plan for unlimited data. So far these changes are working well and it'll be great when we can move to all iPads.

One great thing coming this summer is that our app REC*IT will have admin functionality. I'll work directly with the developers to see if it would be possible to include the mobile site functionality through the app without the need for WIFI. I think that would be great for school that either don't have WIFI or where it is unreliable - which seems common especially out at remote fields.
@davis Devin, as of now, UVa-Wise utilizes both paper and an iPad. This is due to the cell service in some areas. We do not currently have WiFi at any of our fields, so we opted to purchase a departmental WiFi "jetpack." At our outdoor facilities, it has worked wonders, with the ease of keeping stats in real time and limits the number of students I would need to hire to be the office to do tasks such as inputting the scores the next day. Unfortunately, for our recreational gym, they had to remove the WiFi during our recent renovation of the gym last year, and they have neglected to reinstall it, which is something we are attempting to get completed as soon as possible. The cell service in that gym is not good at all and although our jetpack would work to add members to rosters, keeping stats is impossible for certain sports, especially basketball due to the fast paced game play. So for right now, we are keeping stats on paper for basketball and indoor soccer. Once we return back outdoors, we will go back to utilizing the mobile solutions.

Here at Texas Southmost College we print out scoresheets a few hours before the first game each day. We try not to do it a day in advance since teams are still adding to their rosters and we want the scoresheets to have the most updated information. We also have ipads however, we have horrible service outside therefore it is difficult to use them outside. While the officials are tearing down and cleaning up, the supervisors will go inside to the computer to input the scores, stats and attendance. This allows our teams to have the most updated information before the night ends. This has been working good for us. Hope that helps!
